Longan or dragon eyes
Longans are small and round with a smooth, beige-brown leathery skin. The flesh is white to off-white or pinkish colour surrounding a central seed. Longans are very similar in flavour to lychees although milder and less acidic. Use in fruit salad and platters, add to Asian dishes, for example sweet and sour chicken, pork and fish. Puree and use in fruit juices and deserts.
Selection
Look for bright, firm, well coloured fruit. There should be no sign of skin discolouration, cracking or shrivelling.
Storage
Wrap in plastic and store in refrigerator. Best to use as soon as possible.
Preparation
Remove skin and deseed before use.
